Before moving out of Hong Kong, I wanted to try all the restaurants I could. One of the most famous Michelin-star restaurant of Hong Kong was on the top of my list. Its name ? Amber. Located in the highly trendy Mandarin Oriental at The Landmark, Amber is a French fusion restaurant.

The pitch? Experiencing the tastes. From sour to bitter and umami. The Chef Richard Ekkebus makes you rediscover all the variety of the tastes, by creating contemporary and innovative recipes inspired by the French cuisine.

I am lucky enough to have been in various Michelin-star restaurants in my life, and I have to say that my experience at Amber is among my very favorite. Everything was exquisite and surprising. If you travel to Hong Kong and are a foodie, you should definitely book a table at Amber.

Listen to the stories behind the recipes: At every course the waiter will explain you the components and what taste they are standing for, pay close attention. It will certainly improve your comprehension of the recipes but also realise the talent of the Chef. It took my experience of his cuisine to another level.

Book in advance: As all the attractive restaurants, Amber requires a booking. I would recommend you reserve your table a month before, if not more during high season.
